MINIREVIEW Vitamin B12 Sources and Bioavailability

چکیده

The usual dietary sources of vitamin B12 are animal foods, meat, milk, egg, fish, and shellfish. As the intrinsic factor-mediated intestinal absorption system is estimated to be saturated at about 1.5–2.0 lg per meal under physiologic conditions, vitamin B12 bioavailability significantly decreases with increasing intake of vitamin B12 per meal. The bioavailability of vitamin B12 in healthy humans from fish meat, sheep meat, and chicken meat averaged 42%, 56%–89%, and 61%–66%, respectively. Vitamin B12 in eggs seems to be poorly absorbed (<9%) relative to other animal food products. In the Dietary Reference Intakes in the United States and Japan, it is assumed that 50% of dietary vitamin B12 is absorbed by healthy adults with normal gastrointestinal function. Some plant foods, dried green and purple lavers (nori) contain substantial amounts of vitamin B12, although other edible algae contained none or only traces of vitamin B12. Most of the edible blue-green algae (cyanobacteria) used for human supplements predominately contain pseudovitamin B12, which is inactive in humans. The edible cyanobacteria are not suitable for use as vitamin B12 sources, especially in vegans. Fortified breakfast cereals are a particularly valuable source of vitamin B12 for vegans and elderly people. Production of some vitamin B12-enriched vegetables is also being devised. Characterization and bioavailability of vitamin B12-compounds from edible algae.

Substantial amounts of vitamin B12 were found in some edible algae (green and purple lavers) and algal health food (chlorella and spirulina tablets) using the Lactobacillus delbrueckii subsp. lactis ATCC7830 microbiological assay method. Corrinoid-compounds were purified and characterized from these algae to clarify the chemical properties and bioavailability of the algal vitamin B12. True vita...

Systematic review on daily vitamin B12 losses and bioavailability for deriving recommendations on vitamin B12 intake with the factorial approach.

AIMS To systematically review the literature on daily losses and bioavailability of vitamin B12. These estimates could be used for deriving recommendations on vitamin B12 intake for adults and elderly. METHODS We identified publications on daily vitamin B12 losses (July 2011) and publications on the bioavailability of vitamin B12 from foods or diets (June 2010) in MEDLINE, EMBASE and the Coch...

Feeding dried purple laver (nori) to vitamin B12-deficient rats significantly improves vitamin B12 status.

To clarify the bioavailability of vitamin B12 in lyophylized purple laver (nori; Porphyra yezoensis), total vitamin B12 and vitamin B12 analogue contents in the laver were determined, and the effects of feeding the laver to vitamin B12-deficient rats were investigated. The amount of total vitamin B12 in the dried purple laver was estimated to be 54.5 and 58.6 (se 5.3 and 7.5 respectively) micro...

Effects of Vitamin B12 in Neonates and Young Infants

Vitamin B12 (cobalamin) is an essential coenzyme for nucleic acid synthesis. Animal protein is the major dietary source of vitamin B12. Deficiency of vitamin B12 leads to megaloblastic anemia, degeneration of the brain, spinal cord, peripheral nerves, and abnormalities of epithelial tissues. Two factors are necessary for the cure of megaloblastic anemia: one in food (extrinsic factor) and one i...
